The Devlins' Yellowman Bar

INSPIRATION

Sharon Noonan (née Devlin) has always cherished her childhood summers in Ballymena, Co Antrim. Sundays were spent In the backyard of her paternal grandmother's house, where Sharon and the whole Devlin family would gather for a cherished tradition: making Yellowman, a sticky, hard toffee, from secret ingredients in anticipation of the annual Lammas Fair.

Sharon remembers the giant cauldron-like pot with its golden liquid bubbling and frothing before being poured onto a metal slab to cool. Next it would be stretched and pulled on a wrought iron hook. 

The Devlin stalls were front and foremost in Ballycastle's Diamond, brimming with in-season fruit such as plums, and of course Devlins' Yellowman, a hallmark of the fair.

Sharon's love for those nostalgic flavours has never waned and collaborating with Bean and Goose to make the "Devlins' Yellowman Bar" has been like revisiting her childhood and bottling a piece of her past.

For Sharon and her family "The Devlins' Yellowman Bar" isn't just a decadent treat; it is a story in a bar, a piece of heritage, and a testament to the enduring bond of family and tradition.

Devlins' Yellowman Caramel, Plums & Clove in sweet Dark Chocolate from Ecuador 62%

We had help in the kitchen creating this bar from our friend Anthony O’Toole, chef, gardener & writer. 

The flavour of this bar was inspired by memories of Devlins' Yellowman and those juicy plums.

We created a Yellowman syrup with Cloves and infused slices of fresh plums. These were then dehydrated, and the syrup was further reduced to create delicious, crunchy caramel with flavours of the Lammas Fair. 

The plums are scattered on top of our dark chocolate from Ecuador, and the crunchy caramel was broken into bite-size pieces and incorporated into the bar.

This crunchy, sweet, and lightly spiced bar will take Sharon and you back to the flavours of the Lammas Fair.
