Ingredients
- 135g plain flour
- 1 tsp baking powder
- 1/2 tsp salt
- 2 tbsp caster sugar
- 130 ml milk
30g melted butter
- 1 large egg separated
- 120g milk

80g Bean and Goose dark chocolate
- 1 tbsp peanut butter

Directions
- In a large mixing bowl, combine the plain flour, baking powder, salt, and caster sugar.
In a separate bowl, whisk together the milk, egg yolk and melted butter. Fold the wet ingredients into the dry ingredients until just combined.
- In another bowl, whisk the egg white until stiff peaks form. Gently fold the whisked egg white into the batter.
- In a small saucepan, gently heat the milk, dark chocolate, and peanut butter until melted, stirring constantly.
Pour the melted chocolate mixture into a jug and keep warm.
- Heat a non-stick frying pan over medium heat and ladle the pancake batter onto the pan to form small pancakes. Cook for 2-3 minutes on each side until golden brown.
Serve the pancakes warm, drizzled with the chocolate sauce and topped with chopped banana and peanuts. Finish with maple syrup if desired.
