January had become the time of the year when we pack our bags and head off to far flung places to be inspired. San Francisco was one the magical places we visited on this years journey.

San Francisco and The Bay Area is the birth place of Californian cuisine and somewhere we have longed to visit. Our trip was full of memorable moments one of which was a desert in a restaurant that has become a Californian institution, Zuni.

Zuni has been the epitome of laid back California food for 40 years and it is where we ordered a Pistachio Cream and Orange Eton Mess.

A cloud of fluffy, creamy deliciousness without the usual Eton Mess sweetness.

If you are ever in San Francisco go to Zuni and try this classic and thoughtful flavour.

For this bar we have combined our creamy and buttery white chocolate from Ecuador 36% with a sweet and earthy pure pistachio butter. We have studded the bar with gently roasted whole pistachios and pieces of candied orange.
