Kai is the Maori word for food and the Galway restaurant of a New Zealander chef. Jess Murphy. Jess opened Kai in 2010 with an approach to food that seems simple, high-quality produce, as local as possible, cooked intelligently.

When we dreamed up the Chef Series to mark 10 Years of Bean and Goose we knew we would love to make a chocolate bar with Jess. A powerhouse of Irish food and a champion of other Irish food businesses Jess was the perfect collaborator on this unique flavour.
Jess is bursting with ideas and enthusiasm and we discussed many beautiful bar ideas before settling on this stunning flavour - Vietnamese Coffee and Banner Blueberries in buttery white chocolate from Ecuador 36%
This bar is about highlighting amazing Irish producers - just like Jess does.
White Chocolate with Banner Blueberries, Cloud Picker Coffee and Cardamom
These Organic blueberries are the Duke Variety and are grown by Banner Berries in Co Clare. The plumpest, most delicious blueberries we have come across, dehydrated by the Bean and Goose team and scattered on top of this sweet and delicious white chocolate bar.
The white chocolate from Ecuador is buttery and sweet. It has been infused with coffee from another great Irish company Cloud Picker in Dublin. As per Jess’s recipe, the coffee & white chocolate reminiscent of Vietnamese coffee has been further elevated with fresh cardamom.
This is white chocolate with coffee, cardamom, and juicy blueberries.
We have infused white chocolate from Ecuador with Cloud Picker coffee, added a pinch of fresh cardamom, and topped each bar with dehydrated organic Duke blueberries from Co Clare.
It tastes delicious!
And the name, is a nod to those blueberries and Jess's childhood love for the 1980s show, The Dukes of Hazzard, because, well, why not?
