The Goldie Milk Bar
Goldie is a fish restaurant in Cork City centre at the forefront of
gill-to-fin cooking, producing the most exciting Irish food. At the
heart of this approach is a commitment to sustainability and the talent
of head chef and owner Aishling Moore.
Aishling has been awarded Ireland's best chef and is a leader in the Irish
food scene.
Working with Aishling on a chocolate bar for this series was a dream
come true. The bar is inspired by a dessert on the menu in Goldie, which
uses buckwheat and is also a tribute to The Golden Crisp bar from
Aishling's childhood.
Milk Chocolate with Pieces of Popped Buckwheat in Crunchy Caramel
of popped buckwheat in a deep, crunchy caramel throughout the bar
and scattered on top.
It is a Golden Crisp Bar meets a Daim Bar and delicious!
The buckwheat was popped, dehydrated, and added to the rich caramel
by the Goldie team and then sent to our team in Beana and Goose to
make the bars. This is your opportunity to try a little bit of magic from
Aishling, the Goldie team, and the team at Bean and Goose.
We urge you to get to Goldie as soon as possible, try this talented chef's
food, and pick up a copy of her excellent book, The Whole Catch,
published by Blasta Books.
PAIRING SUGGESTION
Champagne, Prosecco or sweet white wine. Alternatively, a sparkling
Elderflower cordial would be delicious.
